What is Amaranth?

Amaranth, much like Quinoa, is a pseudocereal grain, which means that it contains similar nutritional benefits of whole grains but is actually a seed. This seed is a powerhouse of nutrients even referred to as the “food of immortality” by the Aztecs.

It is also considered a pseudocereal because it is cooked similarly to other grains like oats, wheat, and rice. A noted benefit of Amaranth is that it is naturally gluten free and a great choice for those with Celiac Disease.

What nutritional benefits does Amaranth contain?

This is the part many of us care about.

For starters, Amaranth is a complete protein source, which is fantastic for those that follow a plant-based diet, or are looking for animal free protein sources.

Amaranth contains close to double the amount of protein found in rice & corn.

It is a good source of protein, fiber, iron, selenium and B Vitamin (B6).

Amaranth wafers are made with many different ingredients but there are a couple of key ingredients that make these wafers unique:

1. Amaranth Flour (the base)

2. Flavor (usually in the form of fruit/ coffee/ spice powders)

3. Another Flour for texture

4. Sweetener

5. Water (Plant Based Milk Powders might sometimes be used as well)

Ingredients

Select all ingredients

1 package oblea, of colors 250 grams sugar 100 milliliters water 50 grams amaranth 50 grams almonds, filet and toast 50 grams toasted sesame seeds

Preparation

Put the sugar in a pan, cover with water taking care not to splash, put on fire and evaporate the water at medium temperature to form the copper-colored caramel, without moving at all or else it will crystallize. Take a wafer and with a fork put some candy so you can paste another wafer. Since two wafers are joined, the bank passes through the sugar and covers it with amaranth, almond or sesame seeds.
